The Sullivan Catskills welcomes a fun new dining experience with Double Up, where a 1980 Bristol double decker bus has found new life as a charming restaurant. Located in Parksville, this creative venture comes from Rob and Kim Rayevsky, familiar faces in our local culinary scene.
The Rayevskys built their reputation running the Rolling River Cafe Gallery Inn in Parksville from 2008 to 2018, followed by leading the kitchen at Upward Brewing Company. Their dream of converting a London bus into a restaurant materialized when they purchased a retired Philadelphia tour bus in 2022.
Now, that vision has become reality. The first floor houses a commercial kitchen with concession windows for takeout, while the upper deck offers diners a sunny dining room with panoramic views. The menu focuses on locally sourced, healthy food with an environmentally conscious approach.
The team brings diverse talents to Double Up. Rob Rayevsky, originally from Moscow, switched from award-winning children’s book illustration to cooking in 2008. Kim Rayevsky contributes her international background and management expertise, while Master Baker Justin Edwards, a Livingston Manor native, rounds out the team with his baking skills developed at local establishments including Flour Power Bakery.
