The Sullivan Catskills Dove Trail© commemorates the 50th anniversary of the 1969 Woodstock festival and celebrates its impact on our Sullivan Catskills. It’s a collection of 50 dove sculptures perched in villages, towns, and at several tourism businesses. Each permanently mounted dove is hand-painted by a professional local artist and inspired by the legendary event held here in 1969.

• a salad of spring peas, flowers, and trout roe raw
• bass with compressed kohlrabi, lardo, and basil blossoms
• a stew of stinging nettle and fiddlehead fern with smoked and dried river eel
• grilled brook trout from @beaverkilltrouthatchery with broccoli three ways, green garlic, and rocket flowers
• lasagne with morel mushroom, wild onion, and chicken from @snowdancefarm in Livingston Manor
