The Catskills’ resurgence as a vacation destination is headed into high gear in 2022. For years, the region has been building back to its Borscht Belt heyday, when New York City residents flocked to the countryside to stay in one of hundreds of Catskills resorts.
Look, things change. We didn't need a pandemic to tell us that the Catskills, too, have evolved with the times. Harried city dwellers rushing to the Borscht Belt over the last two years have accelerated the region's renaissance. And it was already on the precipice of a revival.

From skiing and snowshoeing to holiday light shows and local mulled cider, here are all the top things to do this cold-weather season in the Sullivan Catskills. Tis the season to bundle up, wander the snow-covered woods, and sip a hand-warming drink afterward. Or shop till you drop at a holiday market featuring local artisans and food producers. Or hurtle down a snowy slope on skis, or watch your kids yelp gleefully on a snow tube.
The village of Catskill doesn't seem particularly Catskilly. That's partly because it's located on the Hudson River, several miles to the east of the mountains that give the region its name. Still, you can see those mountains, a bumpy band of grayish lilac, from the house of Thomas Cole, where my husband, Caleb, and I found ourselves one recent afternoon.
The Catskills Mountains revitalization continues with new hotels, restaurants, and drinking establishments blossoming across several counties. However, the best way to tackle this large, meandering region is in chunks. The 48-hour weekend works well, especially since most establishments are open for limited hours Thursday-Sunday anyway.
